Emeril uses this to make "fancy schmancy potatoes". It is actually a very handy Japanese spiral slicer. It is 11" long. Use for potatoes, cabbage, daikon, carrots, onions or any firm vegetable. (see link for additional information). Tool comes with a flat blade and 3 "comb" blades (coarse, medium and fine teeth).
