Love this stuff.
I lived in Australia for years and years. After I stopped being able to drink coffee, this stuff was a lifesaver. Made is just like coffee, but it actually tastes even better; it's got a nutty, spicy flavor, absolutely delicious. I used it in bread too, with a little bush honey - cannot describe how yummy it was. It's one of the foods I miss most.

Great to see Wattleseed getting around the world. Since I accidentally created this product (read about it at Cherikoff.net) during research into the nutritional value of Australian wild foods we have exported tonnes to countless countries.
I also have a research project underway which extracts a range of compounds from Acacias and which we are proving have a powerful anti-cancer effect.
In regards to the recipe, my suggestions for use are as a spice added to pan fried mushrooms (I add a pinch of Forest anise too) or see this site for Emeril's Wattleseed ice cream.
It's also terrific in unsweetened whipped cream and in white chocolate truffles.
